Tasting Notes: Glera-based still wine. Pale straw-yellow with green hints. Grapey, fruity bouquet with floral notes of acacia blossoms and wisteria. Crisp and balanced, it displays good sapidity and an elegant structure and fills the mouth with flavors of both fruit and minerality. Very refreshing with a pleasant aftertaste.
The Estate: Cantine Bedin was established in the early 20th century by the Bedin family. The winery has been passed down through generations, maintaining its family-run heritage. They are situated in the heart of the Prosecco DOC region, specifically in the hills of Asolo, which is known for its ideal conditions for producing high-quality Prosecco. The winery emphasizes sustainable and environmentally-friendly viticulture practices. They focus on minimal intervention in the vineyard and the cellar to let the natural characteristics of the grapes shine through in the wine. While they uphold traditional winemaking techniques, they also incorporates modern technology to enhance the quality and consistency of their wines. The winery provides a charming setting with beautiful views, making it a delightful spot for both casual wine enthusiasts and serious connoisseurs.
The destemmed grapes are loaded into our press for soft pressing. Juice and pulp are separated from the skins right at the start. The juice is fermented in neutral, closed stainless steel tanks at steady, cool temperatures to increase retention of the natural aromas of the grapes. After about 15 days the wine has achieved a sufficient, yet low alcohol content and the fermentation step is complete. The resulting wine undergoes tartaric stabilisation and fining in temperature-controlled stainless steel tanks. After sterile filtration the white wine is bottled and allowed some some rest in the cellar before being released for sale.
Suggested food and wine pairing: Very versatile as a food companion. Originally meant for pairing with traditional dishes from the region (white asparagus, fresh pasta with feta, meat or vegetables - pumpkin; polenta, carpaccio etc.), it lends itself well to experimentation on far more diverse food settings. Push the boundaries and give it a go with Chinese, Pho, Tempura or Sushi. Cheese (buffalo milk, Brie, Camembert).
