Tasting Notes: Light golden yellow in color with lively, velvety bubbles. Rich and complex on the nose, it offers intense ripe fruit flavours and floral notes of broom, wysteria and rose. A touch of tropical fruit joins ripe apple and pear flavours in a full-bodied and creamy palate, well balanced by crisp acidity. Very elegant finish. 20 grams of residual sugar.

 

The Estate: Cantine Bedin was established in the early 20th century by the Bedin family. The winery has been passed down through generations, maintaining its family-run heritage. They are situated in the heart of the Prosecco DOC region, specifically in the hills of Asolo, which is known for its ideal conditions for producing high-quality Prosecco. The winery emphasizes sustainable and environmentally-friendly viticulture practices. They focus on minimal intervention in the vineyard and the cellar to let the natural characteristics of the grapes shine through in the wine. While they uphold traditional winemaking techniques, they also incorporates modern technology to enhance the quality and consistency of their wines. The winery provides a charming setting with beautiful views, making it a delightful spot for both casual wine enthusiasts and serious connoisseurs.

A milestone in Bedin’s portfolio, dry millesimato was the first Asolo Prosecco to be released as the designation was created in 2010. The careful selection of handpicked Glera grapes is blended with Bianchetta Trevigiana, Perera and Boschera from the very first family vineyard to achieve unprecedented complexity and finesse.

 

Suggested food and wine pairing: The off dry Prosecco with outstanding finesse and elegance, it is best matched with fried canapés, pastries, savoury pies, pies with vegetables, and biscuits but also makes for an unexpected, tasty contrast with Parmesan and other intense cheese. Pasta stuffed with mushrooms, truffle risotto, rich salads (niçoise, rice salad, or caprese), cheese (fresh Mozzarella, Fontina, Ricotta), desserts (cheesecake, panna cotta, macarons, fruit tarts,  fresh berries, shortbread).
